Now, we would like to finally introduce you all to the chef who has been running the show and creating some fantastic specials for you, Annie Khotsombath.

Annie got her love for cooking at an early age, through marathons of Chopped and helping her grandmother in the kitchen. Much of her childhood was also spent helping out at her family’s authentic Asian neighborhood market.

Her passion for food transformed into a career when she got her culinary degree in 2015; since then, she has worked various roles as a prep cook, pastry chef, and garde manger. She even worked at Nod Hill back in the summer of 2022 on one of our partner food trucks!

In her role with us, Annie has been thoroughly enjoying the chance to create recipes with our beer and says that the overwhelmingly positive feedback from all of you has been immensely rewarding.

Annie’s favorite dishes to cook include her (crowd favorite) focaccia and jams, and outside work, she loves to make quiche and casseroles for friends and family. We have been thrilled to have such a wonderful addition to our team this year - with Annie, we know Tuck In is in very good hands.

This week we’d like to highlight one of the very first accounts to buy our beer, and a foundational pillar in the CT craft beer scene: My Place in Newtown, CT @myplace.restaurant

From Nod Hill Brewery owner, David Kaye:

“I first met Mark Tambascio back in 2006, after hearing that My Place was a serious beer bar and the only spot in the state pouring lambic (Cantillon Iris on draft on my first visit!!). Back then, the cozy bar took up maybe 200 sq ft in a corner of the restaurant, with seating for about ten patrons. I became a regular and over the years I probably learned more about beer at My Place than anywhere else — how to taste, the range of styles out there, the local homebrewing scene, brewing history, drinking culture. It was a front-row seat to the craft beer explosion of the early 2010s.

Many of the regulars from back then went on to found breweries or become professional brewers (including Mark himself with @newsylumbrewingco) — you were rubbing elbows with the future of CT beer without even knowing it. I’ve met so many folks over a beer at My Place that have gone on to become good friends and colleagues that it’s hard to list them all - from John Watson of @w.f.brewery to Chris Sanzeni of @brokensymmetry and even our current head of brewing ops Rob Bollard.

Thanks to the unflagging dedication & passion of Mark and the one-and-only Sharkie (Mark Lennon aka best bartender in the biz), My Place is still one of the top tier beer bars in the state (really in all of New England), with a curated draft list that balances the best of classic European beer with a generous selection of local offerings, and a warm communal atmosphere that persists to this day. Worth also mentioning they also make excellent pizza and a killer spicy margarita!

We were thrilled to support two fantastic organizations within our community with donations this week - the Norwalk River Valley Trail (NRVT) and Ridgefield Operation for Animal Rescue (ROAR). We owe a massive thank you to everyone who has come out to our brewery to support these causes, as well as special gratitude to our amazing wholesale partners for supporting our fundraising efforts through the purchase of One for the Trail NEIPA.

The Norwalk River Valley Trail @norwalkrivervalleytrail is a mission we support immensely at Nod Hill. This operation is working to make our community more walkable and accessible through the build out of a 30 mile trail running from Norwalk to Danbury. We brew our One for the Trail New England IPA every year to raise money to support their efforts. This year, with your help, we raised $1845 for NRVT through both Taproom sales and distribution of this beer! Thank you all for supporting this amazing community organization!

Ridgefield Operation for Animal Rescue @ridgefieldopanimalrescue.roar began as a simple grassroots effort in 2000 to support adoption efforts at the Ridgefield Animal Shelter. ROAR’s efforts then grew to building the Ridgefield Bark Park, establishing a certified Therapy Dog Program, and opening the Donofrio Family Animal Shelter in 2005.

We are proud to announce that we raised $2500 for them this past Sunday with our fundraiser in the Biergarten! Thank you to all those who came out to support this cause, thank you to the patrons who donated and bought Geobunny throughout the event and reserved tables for their family and friends, and thank you to the various sponsors who graciously donated to this fundraiser. Also thank you to @fasterthingsabb for providing great music for this event!

We also raised an additional $450 (and counting) for ROAR this year through round-up-and-give donations from our Tuck In food truck. Thank you all for your continuous generosity to these causes within our community!

After months of planning, installation, and commissioning alongside the team at BrauKon, we’re excited to finally be brewing on our new brewhouse.

While this is a major milestone for our team, it’s really the beginning of the next chapter. Every valve, every pump, and every process has been designed with one goal in mind: brewing better beer.

The biggest difference isn’t just the new equipment. It’s the level of precision. From mash temperatures and water chemistry to lautering, boiling, cooling, and fermentation, we now have greater control over every step of the brewing process. That control allows us to produce more consistent beer while giving our brewing team the ability to continually refine and improve every recipe.

This first brew, featured in this video, is just the beginning. Reaching our first brew day isn’t the summit. It’s the foot of the mountain. Over the coming weeks and months, we’ll continue dialing in recipes, refining our processes, and learning everything this brewhouse has to offer. After months of planning, installation, and commissioning alongside the team at BrauKon, we’re excited to finally be brewing on our new brewhouse.

While this is a major milestone for our team, it’s really the beginning of the next chapter. Every valve, every pump, and every process has been designed with one goal in mind: brewing better beer.

The biggest difference isn’t just the new equipment. It’s the level of precision. From mash temperatures and water chemistry to lautering, boiling, cooling, and fermentation, we now have greater control over every step of the brewing process. That control allows us to produce more consistent beer while giving our brewing team the ability to continually refine and improve every recipe.

This first brew, featured in this video, is just the beginning. Reaching our first brew day isn’t the summit. It’s the foot of the mountain. Over the coming weeks and months, we’ll continue dialing in recipes, refining our processes, and learning everything this brewhouse has to offer. Every improvement we make brings us one step closer to creating thoughtfully crafted beers that complement the curated experiences we’re proud to share with our customers.

The water we make our beer with comes from the Norwalk River watershed, and it flows into the Long Island Sound where many of the oysters you will eat come from!

We wanted to send a little gratitude today towards one of our favorite partners in Litchfield County, Pizzeria Marzano! Located at 1315 East Main Street in Torrington, Marzano’s feels like a home away from home.

Marzanos first opened its doors nearly 17 years ago. We appreciate their devotion to sourcing the cleanest, most authentic ingredients in everything they make. Most everything on their menu - from pizza to paninis to the beverages they offer - is either imported from Italy or carefully sourced locally, and their beautiful Italian-crafted wood-fired oven is the heart of their establishment.

Pizzeria Marzanos continues to be a fantastic supporter of ours. We appreciate how much they love to share our beer with their community and neighbors, how they are thrilled to sample and serve whatever new styles we bring in (Although, we know Jonni has an affinity for Rabbit’s Foot😉).

Our pollinator meadow, tucked in to the left of our Biergarten, is now in full bloom. August is one of the best times to enjoy the view while sipping a beer in our Biergarten.

This meadow was once an overgrown tangle of invasive shrubs and weeds. Today, it’s a thriving patch of New England-native plantings, like Black-eyed Susans, bee balm, milkweed, coneflowers, and goldenrod, all doing their thing for the local bees, butterflies, and hummingbirds.

None of this happened without the help of our community and some really special people. Huge thanks to Jana Hogan for spearheading the project, Nancy Kaye for her help, and to the Ridgefield Pollinator Pathway, Eco59 Seed Project, Norwalk River Watershed Association, and The Ridgefield Garden Club for the generous support that made it possible…not to mention our original group of volunteers who helped prep and seed the meadow back in 2021!

Come see it before the season turns - grab a beer (maybe a Meadowsong?) and enjoy the beauty!

We had a great time hosting friends of the @ridgefield_bicycle_club last night for their Thirsty Thursday bike ride! The weather was certainly on our side. 40 riders came out for a sunny 20 mile ride starting at @anconaswines, through to Weston, and then back up north to our brewery for some nice cold beers after.

We love to host outings like this - and hope to host many more - for our community’s cycling, hiking, and walking clubs🚴

2) As we start to build our very own Oktoberfest food menu for the first time ever, we brought a little teaser to our menu this week in the form of Festbier Gravy for a new Poutine Special . For this special, Chef Annie prepared a creamy homemade gravy with shallots and thyme, deglazed with our very own Festbier to give it a unique - and quite delicious - bready malt character.

A 5% German-style Fest Lager. Our Festbier has a bready Heirloom Pilsner malt chracter, refreshing drinkabikity, and a hearty flavor. Best enjoyed by the liter!
