Who’s excited for our 5th annual Afternoon of Casks (AKA Cask Fest) on March 22?!

We cannot wait to host this festival yet again for our CT brewery community!

Since we first hosted this event 5 years ago, our Afternoon of Casks has become something we very much look forward to - an opportunity to connect with beer lovers of all kinds and get some of our favorite CT friends and brewers together in one space (including some of our most recent collaboration partners!) to celebrate traditional cask ale and lager.

Just wanted to introduce (or reintroduce - I’m sure many of you have met them already) our lovely front of house managers, Eddie and Beau!

🍻EDDIE🍻 (slide 1) has been with Nod Hill since Oct of 2018 and loved the brewery right away. He became a sales rep for us in 2020, and then pivoted to run the retail store and assist in the brewhouse during the pandemic. In 2021, he became Taproom & Biergarten Manager, and this is how we’ve known him since.

Historically, Eddie’s favorite beers have been Beam and Ace of Wands, but as of late he’s been enjoying some new hoppier styles, like Rabbit’s Foot. He loves being able to use his passions for craft beer and hospitality to provide a truly personable experience to everyone who drops in.

🍻BEAU🍻 (2nd slide) got into craft beer when bartending during college down in DC, and managed bars across DC, Philly, and CT before joining the Nod Hill crew in 2021. Growing up just 10 min down the road in Wilton, Beau appreciates the way this role has allowed him to reconnect with and have an impact on the community he grew up in.

Beau’s favorite Nod Hill beer is Le Bucheron, our Franco-Belgian Amber.

This past week we added 300lbs of whole cherries from @woodlandfarmct on to a blend of mixed fermentation oak aged beers.

We sampled quite a few of our current barrel-aged beers to determine our next line of attack. After careful consideration, we decided on a blend of 3 oak barrels to condition on CT farm-grown cherries: a barrel of spontaneously fermented beer, a Belgian Trappist-inspired ale, and one of our barrels of wet-hopped farmhouse ales from our trip to @skaneateleshopfarm !

The beer will referment on cherries for the next 2-3 months, before bottling and kegging. Mixed-ferm beers take patience and time, but the flavor complexity they develop is well worth the commitment🍒🍻

At Nod Hill, we are proud to offer English-style cask ale. We are also proud to be one of less than 20 breweries in the US with Cask Marque Accreditation.

But why are cask ales so special?
- Natural carbonation = less gas, gentler bubbles, easier drinking
- Cellar temperature = more expression of flavor and aroma
- Venting = slight oxidization that subtly changes the beer’s flavor over the days each cask is pouring

The process of creating cask beer is also quite distinct. When beer is finished fermenting but has not yet been carbonated, we transfer it to a cask along with a small quantity of sugar and yeast. This kicks off a secondary fermentation process where the yeast consumes the sugar and creates CO2 as a byproduct.

Once the beer becomes naturally carbonated, we place the casks in a temperature-controlled space (around 50-55°F) and vent the tops of the casks to allow excess CO2 to be released. Then they are connected to a beer engine & hand pump to be served for your enjoyment.

Along with our classic English pub styles, we are excited to offer a cask version of Geobunny at this time. Stay tuned for some fun & interesting iterations of our flagship IPA on cask to complement our more traditional offerings!

Last week, a group of Nod Hill staff and brewers took a trip over to Branford to visit @newenglandbrewing ‘s new location. Greg Radawich, NEBCO’s director of brewing operations, brought us on a tour of the newly renovated brewhouse and shared some beers with us in their beautiful new taproom.

We are super excited to announce an upcoming project with Greg and his brew team on a unique beer that pushes some boundaries of style guidelines - be on the lookout for a new English-inspired beer with an American twist.

Stay tuned for an upcoming 12oz can release of this blended stout that our brewers are working on.

After canning, the remainder of the blend will be divided into the two casks we got from Connecticut’s own @litchfielddistillery - a 5 year bourbon cask and a maple bourbon cask (maple from @maplecraftfoods ). We are already eager for next winter to open those up and experience even more depth to an already dynamic stout.

On Wednesday, our friends from @newsylumbrewingco came by for the afternoon to brew a kräusened maibock with us.

Ronin 51 — Japanese-Inspired Rice Lager // 5% ABV
Created in collaboration with our friend and restaurateur Jeff Taibe of Bar Bushido, a traditional Japanese izakaya in Norwalk, CT, Ronin 51 is brewed with intention, restraint, and balance.

This super-dry, rice-forward lager is delicately spiced with sansho peppercorns added in the kettle, lending a subtle citrusy tingle and gentle herbal complexity. After fermentation, we infused the beer with fresh yuzu zest and juice, giving the aroma a bright, lively lift without overpowering the clean, ultra dry base.

The result is a refreshing, modern take on a Japanese rice lager—clean, ultra dry, aromatic, and built to pair beautifully with the creative offerings at Bar Bushido, where Ronin 51 serves as the official house beer.

Our festive imperial stout returns for the holidays - now suited for sharing in 16oz cans! This year’s release of Calentador, our 11% abv Mexican-inspired Imperial Stout, was fully reimagined by the brew team. A double mash schedule paired with an extended boil pushed the beer to a massive 30°P starting gravity.

After full fermentation, Calentador was infused with generous amounts of Ecuadorian cacao nibs, a blend of Tahiti and Madagascar vanilla beans, chipotle peppers, and cinnamon. The result is a thick, rich stout layered with notes of gooey chocolate, fiery and savory heat, warming cookie spices, and a sweet, full-bodied finish that lingers.

Extremely limited release. Once it’s gone, it’s gone. Calentador is available in our taproom for $22.99 per 4-pack or $6.99 per individual 16oz can.

Carol singing in pubs is a deeply rooted seasonal tradition in parts of England, and we thought we’d bring the merriment stateside! Join piano player Tracy Carlucci for a night of hearty pints and voices - a proper Christmas singalong. No rehearsals, no stage, just songs, beer, mulled wine and good company. Carol singing in pubs is a deeply rooted seasonal tradition in parts of England, and we thought we’d bring the merriment stateside! Join piano player Tracy Carlucci for a night of hearty pints and voices - a proper Christmas singalong. No rehearsals, no stage, just songs, beer, mulled wine and good company. Don’t expect polished, choir-in-church caroling, but something earthier and more communal. Raise your voice (and your glass) as we celebrate the holiday together on the eve of Christmas Eve! We will provide music & lyric sheets, just bring your friends, family & Christmas spirit.

This week brings a pair of fresh hop-forward selections…

Secret Door peeks into a classic Mosaic and Amarillo hop combo, with a few new friends tagging along. Fresh-cut pineapple and grassy aromatics lead the way, chased by grapefruit, lemon, and lime oils running all the way down. Hints of strawberry and dragonfruit flesh keep things weird in the best way. Medium-bodied, soft, and slick. 7% abv.

Sound Chaser is exclusively dry-hopped with the same strikingly aromatic Citra used in our flagship IPA Geobunny. Notes of pithy citrus, honeydew melon & ripe peach with a medium body and clean finish. Saturated hoppy flavor, clean, and a moderate 5.5% strength.

Notes of warming spices, bright orange peel and nutty rye evoke fruitcake, candied oranges and fresh-baked Christmas cookies. 6.5% abv.

Our team visited the farm a few weeks back to harvest the ginger and take a stroll around their lovely property. We have a lot of ties to the Hickories - many of you will recognize @sarahzitnay, one of our founders, who also happens to be the flower farmer at the Hickories. Our partnership with the farm grows from a shared belief that good food and good beer begin with caring for the land, supporting our community, and bringing thoughtfulness & intentionality to every project. Whether it’s working together on recipes & ingredients, collaborating on events, or pursuing sustainability, we share a common purpose: to create experiences that feel rooted, intentional, and deeply local.

@north_county_band is the creative culmination of Chicago-born singer-songwriter Scott Smith and Texas fiddle sensation, Cat Lines. Together they summoned some of Connecticut’s most seasoned and versatile musicians to compliment their songwriting craft & musical prowess and to deliver a unique signature sound. Their debut EP, “Connecticut”, is widely regarded as a grass-roots collaborative effort with songs about the Nutmeg State, isolation, challenges of the modern era, and family. This initial recording release propelled the band into a nine-state, 115-date tour, as well as nominations for New England’s “Country Act of the Year” and “Rising Stars of Connecticut” by the New England Music Awards.

New England native and singer-songwriter @Jason.ingriselli is a passionate musician known for his high-energy, heartfelt live shows backed by his band, The Miles North. With a distinct voice and perspective, Jason has crafted a signature sound he calls New England Country Music – inspired by the ‘90s country classics he was raised on and shaped by years of performing everywhere from concert halls and music festivals to dive bars and brewery taprooms.
