Brewed with historic techniques and a blend of Cologne and Pilsner malts, Diamant’s lightly fruity esters from cold fermentation and conditioning with our house ale yeast blend well with its bright, floral hop aromas.

The story of the Kölsch dates back to the 19th century in Cologne, Germany, as a response to the growing popularity of Pilsners and Helles lagers. Using a cold fermentation on an ale yeast, the Kolsch combines some of the best elements of the ale and the lager. Our Diamant Kölsch is characterized by a delecate fruity character with a subtle orange zest, soft honey-like malt notes, and a dry finish. Cans to-go now available🍺

Our next chapter is taking shape. We’re entering the major phase of installing our new automated brewhouse this week.

Our new BrauKon brewhouse, auxiliary process skids, and hot liquor tanks have all been placed, leveled, and are beginning to come together.

René and Christian, skilled welders from BrauKon in Germany, are on-site assembling the system, while our electricians and plumbers work alongside them to bring everything to life. Over the next two weeks, you’ll see a tremendous amount of fabrication, stainless process piping, and wiring as each piece is connected into one fully integrated brewing system.

One thing that has stood out from day one is the incredible quality, fit and finish, and craftsmanship of the equipment. Every component has been thoughtfully engineered and precision-built, and it’s exciting to watch this all come together at our brewery.

Thank you all for your patience and understanding as we work through this exciting transformation while continuing to brew and serve beer. This is where months of planning start to become a reality… We can’t wait to share the results and usher in a new chapter of precision-driven, quality-first brewing at Nod Hill!

This 4% hibiscus witbier is a truly tart ale with a spicy, dry finish, brewed with copious amounts of malted and unmalted white winter wheat. A light touch of lactose provides balance against bright acidity. Deep pink in color, and with a fruit-packed palate from hibiscus flowers used in the kettle and raspberry and tangerine puree during fermentation.

Our new fully automated German brewhouse arrived yesterday!

There’s a real sense of excitement here at the brewery as a vision we’ve been working toward for several years finally begins taking shape.

From early planning conversations with our Head of Brewing Operations Rob Bollard, to two exploratory trips to Germany, and through hundreds of hours of engineering, layout, and coordination with @BrauKon, this has been a complex journey…and we’re nearly at the finish line.

We’re thrilled to be entering a new chapter of brewing at Nod Hill, one defined by precision, process control, consistency, flexibility, and, above all, exceptional product quality.

We’re deeply grateful to our team for their commitment to a project of this scale - one that has required thoughtful decision-making, sustained focus, and a shared investment in our company’s long-term vision.

Installation of the brewhouse is expected to take about a month. During this time, we’ll maintain our normal days and hours of operation. That said, we kindly ask for your patience if there are any minor service disruptions during the more intensive phases of the install.

The brewhouse area is currently an active construction zone, so please excuse the appearance when visiting the Backspace or using the restrooms.

A rare style not usually seen outside Belgium, this is our take on the table beers made in Trappist monasteries for the monks' own everyday enjoyment.

Today we wanted to give a very special shout out to the team at Redding Roadhouse, who have been our ardent supporters, partners, friends, and Annual Holiday Party hosts for many years now.

Tucked away in the hills and forests of Redding, CT, The Redding Roadhouse is a bar, restaurant, and events venue with a delicious pub-style menu, the best vibes, and a carefully curated beer selection (in fact, they’ve been awarded best beer selection in Fairfield County by CT Magazine two years in a row!).

Their bar currently carries 5 different Nod Hill beers: Geobunny, Ace of Wands, One for the Trail, Rabbit’s Foot, and Featherbed Cherry…a great lineup for some amazing food/beer pairings, if we do say so ourselves (We especially love the Roadhouse Classic Burger x One For the Trail combo). We appreciate their support through not only carrying so many of our beers, but also through the excitement they’ve brought in introducing Nod Hill Brewery to the Redding community.

This 8% New England Double IPA is brewed with Nelson Sauvin, Citra & Enigma Hops, Pale Malt and Unmalted Wheat. Big Nelson aromas of ripe melon, passionfruit, and Sauvignon blanc dominate, along with pithy citrus and juicy peach from the Citra & Enigma. Ok so maybe we haven’t mastered the art of moonwalking quite yet🤣 But we really just wanted to let you know that 𝕄𝕠𝕠𝕟𝕨𝕒𝕝𝕜𝕚𝕟𝕘 ℂ𝕠𝕨𝕓𝕠𝕪 is back in cans to-go!

This 8% New England Double IPA is brewed with Nelson Sauvin, Citra & Enigma Hops, Pale Malt and Unmalted Wheat. Big Nelson aromas of ripe melon, passionfruit, and Sauvignon blanc dominate, along with pithy citrus and juicy peach from the Citra & Enigma. Every year, we brew a 6.7% NEIPA called 𝕆𝕟𝕖 𝕗𝕠𝕣 𝕥𝕙𝕖 𝕋𝕣𝕒𝕚𝕝 as a fundraiser for @norwalkrivervalleytrail . A portion of the proceeds from every 4pk and draft pour sold will be donated to the NRVT.

We went on a little trail walk with NRVT’s Executive Director, Andrea Gartner, to find out more about current and future projects.

Andrea is leading the charge to create 30 miles of walkable, family-friendly trail connecting Calf Pasture Beach in Norwalk, CT to Rogers Park in Danbury - passing through Wilton, Ridgefield, and Redding along the way. When complete, this trail will pass right near Nod Hill Brewery!

This trail will give all the chance to hike, bike, run, walk, or stroll with a baby along the Norwalk River, along ponds, and up lovely Connecticut hills. It is also handicap accessible and dog friendly.

𝕄𝕖𝕒𝕕𝕠𝕨𝕤𝕠𝕟𝕘 is a 6% Farmhouse-style blend that was age for 12 months in our French Oak foeder (the very large barrel located near the entrance to the Backspace).

Foeder aging contributes a subtle oak character and allows Meadowsong’s mixed culture to slowly evolve over time. The extended conditioning helps develop layered farmhouse character, gentle acidity, and a soft, rounded texture while keeping the beer balanced and expressive.

A little history on this beautiful foeder: it is a 20bbl (620 gallon) French oak tank that was manufactered in Galeata, Italy. We purchased it new in the Spring of 2018. Our first beer to go into it was a robust porter, which took on the stronger aromas that oak typically passes along to a beer during the first fill. All subsequent beers that have passed through the foeder have been mixed fermentation ales - primarily, Meadowsong.

We’re proud to offer Meadowsong in both 750mL bottles to go and on draft to enjoy in our Biergarten. It’s one of our favorite beers we make at Nod Hill.
